Discover the man behind Odette, one of Singapore's three Michelin-starred restaurants.
Chef Julien Royer named his daughter Odette after his grandmother, a revered matriarch in his life.
He revealed to CNBC that she is extremely important to him and the person who demonstrated the immense joy, satisfaction, and emotion that food can bring to others.
In 2019, Royer, originally from central France, rose to the top of the culinary world when Odette was awarded three Michelin stars and named the best restaurant in Asia.
The restaurant, located in Singapore's National Gallery, offers French-Asian cuisine in a stunning dining room with pink terrazzo, gray velvet, and nickel and marble accents.
According to Royer, the restaurant is intended to provide a break from the outside world.
"I desire for individuals to enter and experience a comfortable atmosphere in the environment we have created. My hope is that they will enjoy themselves and momentarily forget about their daily life concerns."
